MINNESOTA STUDENT CROWNED LETTUCE-EATING CHAMPION

Nearly two dozen University of Minnesota students gathered in May for a uniquely quirky annual tradition: the Lettuce Club speed-eating contest. The challenge? Devour a full 1-pound head of iceberg lettuce—dressing optional—as fast as possible.

This year’s leafy champion is Ethan Lie, now proudly holding the title of “Head Lettuce,” after polishing off his head of lettuce in just 3 minutes and 30 seconds. Lie tied with fellow contender Jared Burnett, but with Burnett graduating, the crown couldn’t be shared.

In a post-competition interview with Axios, Lie teased a possible expansion of the club’s veggie pursuits, hinting at future challenges with carrots and beyond.

It’s the kind of fun, offbeat tradition you can only find in Minnesota.
